In early 2020, "Dalgona Coffee" went viral worldwide as a whipped instant coffee beverage. However, in Korean street culture spanning the 1960s to 1980s, authentic Dalgona (달고나) or Ppopgi (뽑기) is not whipped instant coffee at all—it is a light, crunchy, puffed honeycomb candy crafted over a flame in a copper ladle.
The Street Confectioners of Dongdaemun
Street vendors melted pure raw glucose sugar over portable charcoal burners until liquid amber. The critical moment occurred when a pinch of sodium bicarbonate (baking soda) was introduced, causing the carbon dioxide gas to inflate the molten sugar into an airy, frothy foam. Poured onto steel sheets, it hardened into a crisp honeycomb candy.
Our Atelier Technique: House-Smoked Honeycomb Brittle
- Unrefined Sugar Caramelization: We cook organic dark cane sugar in copper pots until it reaches 162°C (hard-crack stage).
- Thermal Expansion: Micro-filtered sodium bicarbonate is quickly folded, creating billions of uniform microscopic air bubbles.
- Oak-Smoke Infusion: The cooling slabs are briefly kissed with Korean oak smoke before being crushed into brittle shards.
- The Melting Symphony: In our Smoked Dalgona Latte, the chunks rest on milk microfoam. As you drink, they slowly dissolve, infusing the beverage with evolving notes of roasted molasses and smoked butterscotch.
